Tinned Artichokes Fried in Butter

I am a big fan of tinned foods that taste good and save me time and tinned artichokes are the king of these categories. I simply do not have the temperament that can peel away layer after layer of artichoke leaves until the tender heart is revealed. I have the temperament that can open a tin, drain the liquid and fry the contents in butter until they’re golden and delicious. If you’ve never tried a tinned artichoke then you’re in for a treat with this easy side dish.

INGREDIENTS
400g tinned artichokes
50g unsalted butter
sea salt

  • Drain the artichokes then dry on kitchen roll. Melt the butter in a medium sized frying pan on a medium to medium high heat.
  • Once the butter has melted place each heart, standing up on its base, into the pan. Cook until the bottoms are bronzed, about 3 minutes, then turn over and brown the tops, about 2 minutes.
  • Serve with a sprinkling of sea salt on top.
