When your tomatoes all ripen at once you need some easy recipes to make your harvest last so that none of your hard work goes to waste. Here are 5 of my favourite recipes to preserve the tomato harvest.

Fine Tomato Salsa is amazing with scrambled eggs, tacos and burritos. It’s also a great way to use up a glut of cherry tomatoes.
Blackcurrants make the best jelly to spread on toast or croissants. It’s easy to make and saves for 6 months in the pantry.
Balsamic Glaze is incredibly handy stuff for summer cooking and incredibly easy to make. Drizzle it on salads and veggie, stir it into dressings and marinade meats.
Aubergine, Red Pepper and Tomato Dip is great served with veggies and taco chips or stir it into freshly cooked pasta for a delicious weeknight meal.
Artichoke and Spinach Dip is a warm, chunky and creamy dip that I find very hard to stop eating. It’s wonderful with crackers, tortillas or bread.
Homemade Red Chilli Paste is really easy to make and delicious. It keeps for a couple of months in the fridge and it’s really beautiful to look at. You can play around with the ingredients to find the paste combo you like best.
