Simple Beef Tacos

I’m determined that the kids will share my deep love of Mexican food so I’m building up their confidence with the textures and flavours with dishes like this: Simple Beef Tacos. I think we’re all hardwired to enjoy tactile food so the self-assembly part of tacos is a big hit with all the family. If I have chance to make homemade tortillas then the kids will help out otherwise a pack of store-bought tortillas does the job and we all get to build our perfect tacos.

INGREDIENTS
Serves 2 Adults & 2 Kids

250g ground beef
1 tbsp + 1 tsp taco seasoning
1 mild chilli, deseeded
1 lime
3 spring onions
65ml water
1 tbsp vegetable oil
salt

  • Heat the vegetable oil in a large frying pan then add the beef, grind over generously with salt then brown for a couple of minutes then drain off any excess fat.
  • Deseed and chop the chilli then add to the pan and cook for a minute before adding the taco seasoning and water then stir and allow to simmer on a medium heat for 3 minutes.
  • Squeeze over the lime and taste to check if it needs more salt. Slice and add the onions then serve with tortillas, salad, sour cream, cheese and salsa.
