Pesto Gnocchi and Peas

I try to buy as much fresh food as possible but sometimes I need a really easy dish where a lot of the work has already been done. Start with pre-made gnocchi then stir in some pre-made pesto and you’re on your way to dinner in a matter of minutes. There are lots of variations to this dish; you can use red pesto then stir in jarred peppers or use a black olive tapenade and stir in fried mushrooms. The gnocchi just gives you a blank canvas from which to make a quick and tasty meal.

INGREDIENTS
Serves 2 Adults and 2 Kids

700g pre-made gnocchi
120g pesto
200g frozen peas
2 tbsp olive oil
salt
optional: basil and parmesan

  • Bring a pan of salted water to the boil then boil the gnocchi for 1 or 2 minutes (time from the water coming back to the boil after adding the gnocchi).
  • Pour the olive oil into a large frying pan over a medium high heat. Once the gnocchi is boiled use a slotted spoon to transfer the gnocchi to the hot frying pan. Once all the gnocchi is in the frying pan add the frozen peas to the boiling water and cook for a couple of minutes.
  • Shake the pan regularly to stop the gnocchi sticking. Frying the gnocchi removes excess water and gives the gnocchi a little colour. Drain the peas once they are cooked then add to the frying pan along with the pesto and stir to combine. Serve with some fresh basil and grate parmesan if available.
