My love affair with cranberry sauce continues with this festive sandwich. Bacon and Brie are friends all year round and even more delicious at Christmas time with a layer of homemade cranberry sauce. Baking is the easiest way to cook the bacon for this recipe. I like my bacon crispy round the edges and tender meat.



INGREDIENTS
Serves 2 Adults & 2 Kids
8 rasher of smoked or unsmoked streaky bacon
brie
cranberry sauce
lettuce
baguette
mayo (optional)



- Pre-heat the oven to 220°C (200°C Fan). Place the bacon rashers on a baking sheet then cook in the pre-heated oven for 10 minutes, turning occasionally to get even crispness.
- Cut the baguette in half then slice horizontally. Spread mayo on one half then top with lettuce. Spread a layer of cranberry sauce on the other half then top with slices of brie (as much as your cheesy heart desires).
- Once the bacon is cooked, pat dry with kitchen roll then place on top of the brie. Pop the halves together and slice in half again to serve.
