Bacon, Brie and Cranberry Sandwiches

My love affair with cranberry sauce continues with this festive sandwich. Bacon and Brie are friends all year round and even more delicious at Christmas time with a layer of homemade cranberry sauce. Baking is the easiest way to cook the bacon for this recipe. I like my bacon crispy round the edges and tender meat.

INGREDIENTS
Serves 2 Adults & 2 Kids
8 rasher of smoked or unsmoked streaky bacon
brie
cranberry sauce
lettuce
baguette
mayo (optional)

  • Pre-heat the oven to 220°C (200°C Fan). Place the bacon rashers on a baking sheet then cook in the pre-heated oven for 10 minutes, turning occasionally to get even crispness.
  • Cut the baguette in half then slice horizontally. Spread mayo on one half then top with lettuce. Spread a layer of cranberry sauce on the other half then top with slices of brie (as much as your cheesy heart desires).
  • Once the bacon is cooked, pat dry with kitchen roll then place on top of the brie. Pop the halves together and slice in half again to serve.
