Tomato Meatballs and Rice

I have a few different meatball dishes as the kids eat them all with gusto. This easy sausage meatballs in tomato sauce dish is a really substantial dinner with little effort. In the time it takes to make my no-fuss 20-Minute Fluffy Rice you can have the meatballs and sauce ready.

INGREDIENTS
Serves 2 Kids

4 gluten-free Lincolnshire sausages
120ml passata
60ml water or chicken stock
1/2 tsp sugar
1/4 tsp salt
Rice
100g white rice
240ml water
1/4 tsp rice

  • Put the rice, 240ml of water and 1/4 tsp of salt into a small pan with a lid. Bring to the boil then reduce the heat and cook for 20 minutes then fluff with a fork. (Full recipe here)
  • Pre-heat the oven to 220°C (200°C Fan). Squeeze the sausages out of their casing and form into small meatballs then place them in a small roasting dish. Roast in the oven for 15 minutes.
  • Pour the passata and water into a small frying pan and add the sugar and salt then stir to combine over a medium heat.
  • Once the meatballs are cooked add them to the frying pan and coat them in the sauce. Check the meatballs are cooked through then serve with the rice and some steamed veggies.
