I have a few different meatball dishes as the kids eat them all with gusto. This easy sausage meatballs in tomato sauce dish is a really substantial dinner with little effort. In the time it takes to make my no-fuss 20-Minute Fluffy Rice you can have the meatballs and sauce ready.
Serves 2 Kids
4 lincolnshire sausages
60ml water or chicken stock
1/2 tsp sugar
1/4 tsp salt
100g white rice
1/4 tsp rice
- Put the rice, 240ml of water and 1/4 tsp of salt into a small pan with a lid. Bring to the boil then reduce the heat and cook for 20 minutes then fluff with a fork. (Full recipe here)
- Pre-heat the oven to 220°C (200°C Fan). Squeeze the sausages out of their casing and form into small meatballs then place them in a small roasting dish. Roast in the oven for 15 minutes.
- Pour the passata and water into a small frying pan and add the sugar and salt then stir to combine over a medium heat.
- Once the meatballs are cooked add them to the frying pan and coat them in the sauce. Check the meatballs are cooked through then serve with the rice.
