Winter Lemon Drink

Keeping a family healthy during the winter is a big job so I’m always on the lookout for foods to help protect us against colds and coughs. Did you know that almost 70% of your immune system is in your digestive system? The nutritional benefits of a liquid are absorbed more quickly by the body than solids and this Winter Lemon Drink gets to work straight away to boost your immune system. My Mum swears that drinking this before bed and first thing in the morning keeps her fighting fit.

INGREDIENTS
Makes 2 Drinks
500ml water
2 lemons
1 large piece of ginger (or 1/2 tsp ground ginger)
1 cinnamon stick
1 tbsp maple syrup

  • Pop the lemons in the microwave and nuke on high for 30 seconds then remove and roll them to release the juices inside. Cut the lemons in half then juice into a bowl, straining away the pips.
  • Put the lemon shells, ginger, cinnamon and water into a small pan. Bring the water to a boil then immediately reduce the heat to a simmer for 10 minutes.
  • Stir in the maple syrup and half of the lemon juice then taste to see if you want to add more lemon juice.
