You’d be forgiven for never thinking of serving celery as a side dish on its own. I mostly chop celery with onions and carrots to start stews and soups or use it to scoop large quantities of cream cheese into my face. But braised celery is a tender and flavourful vegetable that goes brilliantly with pork.
INGREDIENTS
Serves 2 Adults and 2 Children
240-260g celery
25g butter
120ml chicken or vegetable stock
75ml cider
1/2 head garlic
1 tbsp apple cider vinegar
1/2 tsp salt



- Peel and slice the garlic and chop the celery into equal length pieces. Melt the butter in a medium skillet (or frying pan) over a medium heat then add the garlic and cook for a couple of minutes to release the flavour.
- Add the celery, vinegar and salt then turn the heat up to medium high. Cook for 1 minute then add the cider and cook for 5 minutes.
- Add the stock, place a lid on the pan, turn the heat down to medium and cook for 30-40 minutes until the celery is soft.
