Prawn Mayo Sandwich

Sandwiches are a perfect food and of that immaculate genre Prawn Mayo is in my top 3 sandwich fillings. The key to this superb seafood sandwich is getting the Marie Rose sauce right. The base is just ketchup and mayo but the flavour punch comes from a couple of extra ingredients. A soft brown seeded roll or loaf is my bread of choice for this sandwich because the texture is ideal with the soft prawns.

INGREDIENTS
Serves 2 Adults

160g prawns
1/4 lemon
salt
50g mayonnaise
25g ketchup
1 tsp Worcestershire sauce
1 tsp hot sauce
1/4 tsp ground black pepper

  • Put the prawns in a bowl and squeeze over 1/4 lemon then grind over generously with salt.
  • In a separate bowl tip the mayo, ketchup, hot sauce, pepper and Worcestershire sauce and mix thoroughly. Add the prawns and coat in the sauce.
  • Shred some lettuce and either place it straight on the bread or toss it in the sauce then assemble the sandwich and demolish.
