Sandwiches are a perfect food and of that immaculate genre Prawn Mayo is in my top 3 sandwich fillings. The key to this superb seafood sandwich is getting the Marie Rose sauce right. The base is just ketchup and mayo but the flavour punch comes from a couple of extra ingredients. A soft brown seeded roll or loaf is my bread of choice for this sandwich because the texture is ideal with the soft prawns.


Certain spices contain chemical compounds that aid brain function and repair. The post-baby brain works extremely hard and spices help support the changes that happen.

INGREDIENTS
Serves 2 Adults
160g prawns
1/4 lemon
salt
50g mayonnaise
25g ketchup
1 tsp Worcestershire sauce
1 tsp hot sauce
1/4 tsp ground black pepper



- Put the prawns in a bowl and squeeze over 1/4 lemon then grind over generously with salt.
- In a separate bowl tip the mayo, ketchup, hot sauce, pepper and Worcestershire sauce and mix thoroughly. Add the prawns and coat in the sauce.
- Shred some lettuce and either place it straight on the bread or toss it in the sauce then assemble the sandwich and demolish.
