Crusted Baked Cod

I love food that looks beautiful, tastes great but takes very little effort to put together. The crust for the fish is packed full of flavour and give a great texture with the nuts and breadcrumbs. A simple and beautiful fish like this can be served with vegetables, potatoes, rice or a bright side dish like Avocado Salsa. I don’t change anything for the kids but they do dunk their portion in ketchup.

Some nuts, beans and seeds contain good levels of omega-3 which is an essential nutrient for your brain to function, especially when managing depression.

INGREDIENTS
Serves 2 Adults & 2 Kids
3 cod fillets
12g breadcrumbs
45g pistachios (weight is shell on)
1/4 tsp coarse sea salt
1/4 tsp garlic powder
small bunch of parsley
olive oil

  • Pre-heat the oven to 220°F (200°F fan). Shell and chop the pistachios and finely chop the parsley then chop the nuts, herbs, breadcrumbs, salt and garlic powder together on a chopping board. Tip the mixture into a bowl then pour over 2 tablespoons of olive oil and mix until everything is coated.
  • Dry the cod fillets then place in an oven proof pan or dish then cover equally in the crust. Pop the fish into the pre-heated oven for 7 minutes then serve.
